Yesterday, I've been making elderflower cordial. It is such a tasteful and fresh drink for the warm spring coming.
Makes about 1,5 L:
*20 heads of elderflower
* 1,5L of water
* 1kg of sugar
* 6 unwaxed lemons ( or 2 lemons and 75g of citric acid)
1 - shake flowers to release insects.
2 - put the water to boil in a large pan with the sugar. stirr until the sugar is completely dissolved.
3 - peal the lemons (keep the zest of 2 - i've put all the zest and it made it a bit bitter), slice them and reserve.
when water is boiled up, take off the heat and add flowers, lemons
slices and zest. cover with a cloth and leave at room temperature for
24hrs.
4 - next day, strain the cordial through a sieve lined with muslin and pour into nice bottles with screw-on lids.
5 - now serve it with some cool sparkling water...
