.elderflower lemonade.

I made eldeflower lemonade this week.

Here is the recipe:

Makes 5 liters.
20 clean fresh elderflower heads
800 gr sugar
10 organic lemons
10 raisins
2 tbsp of cider vinegar
8 liter of water

In one big recipient (or two if you don't have a big enough one), put the clean flowers, sugar, sliced lemons (it may better to take most of the zest off, as mine became a bit bitter), raisins and vinegar. Top up with still water. Put in the sun covered with a towel for 3 or 5 days (until you see bubbles coming up). Then strain into lemonade bottles and keep cool for 2 weeks.
Serve chilled with some mint leaves.

. recipe: elderflower cordial.

Yesterday, I've been making elderflower cordial. It is such a tasteful and fresh drink for the warm spring coming.

Makes about 1,5 L:

*20 heads of elderflower
* 1,5L of water
* 1kg of sugar
* 6 unwaxed lemons ( or 2 lemons and 75g of citric acid)

1 - shake flowers to release insects.

2 - put the water to boil in a large pan with the sugar. stirr until the sugar is completely dissolved.

3 - peal the lemons (keep the zest of 2 - i've put all the zest and it made it a bit bitter), slice them and reserve. when water is boiled up, take off the heat and add flowers, lemons slices and zest. cover with a cloth and leave at room temperature for 24hrs.

4 - next day, strain the cordial through a sieve lined with muslin and pour into nice bottles with screw-on lids.

5 - now serve it with some cool sparkling water...

Liverpool. Café. 1. The Quarter.

The first night in Liverpool, we struggled to find where to eat, and there, just around the corner of our hostel, we found that charming restaurant: The Quarter.

There's a large choice menu, but I had a delicious meal from the specials. I'm not telling you yet, because I'm going to try to make it for Sarah&Jimmy for our farewell dinner tomorrow...
